Marble cake has long been one of the most fascinating cakes for me – the way the chocolate and vanilla layers swirl with each other with a perfect balance of flavors – it is simply the best of both worlds!
Since I am always on the hunt to “healthify” my home-baked goods (mainly reducing the use of refined sugar and using healthy fats), I tried multiple recipes to finally get to the texture and flavor I was searching for – and here I am sharing it with you!
Dry ingredients:
First, let’s grab our ingredients – and make sure they are all at room temperature!

- 1 1/2 cup of all purpose flour (you can substitute with 1 1/2 cup of any of these flours: oat flour, almond flour, or gluten free flour)

- 1/2 cup of whole wheat flour (you can substitute with 3/4 cup of any of these flours: all-purpose flour, oat flour, almond flour, or gluten free flour)

- 2 Tbsp cocoa powder

- 2 tsp baking powder

- 1/4 tsp salt
Wet ingredients:

- 3/4 cup of all-natural maple syrup

- 1/2 cup of melted coconut oil (make sure it cools down to room temperature before using) – you can use avocado oil instead, but the subtle coconut flavor will really elevate the flavor of this cake

- 3 eggs (please refer to this blog post for egg substitutes)

- 3/4 cup any dairy or non-dairy milk (depending on your dietary preferences)

- 1 tsp vanilla extract

Instructions:
Preheat your oven to 350 F
Prepare a greased loaf pan (or you can just put parchment paper in your loaf pan instead of greasing it).
Whisk together the maple syrup and coconut oil, and add the eggs gradually (one egg at a time) while whisking.
Add your vanilla extract and milk and keep whisking just until all wet ingredients are incorporated.
Start sifting your flour, baking powder, and salt on top of our mix.
Mix just until incorporated (do NOT overmix).
Take 1/3 of the batter into another bowl, and mix in the cocoa powder – now we have two batters, vanilla and chocolate!
Pour a bit of vanilla batter, then a bit of chocolate batter, and keep repeating this process of alternating between batters until all batter is gone
Bake on the middle rack for 45-50 minutes (or until a toothpick poked in the middle of the cake comes out clean).
Et voila! You have the perfect guilt-free marble cake that you can enjoy as an afternoon treat or a snack any time of the day.
