The Ultimate Chocolate Cake (Healthified)

Imagine a rich, moist chocolate cake that melts in your mouth with every bite. This cake is everything you need and more: the perfect afternoon pick-me-up, or simply an indulgence for your sweet tooth. Best news is? I made a healthy version which you can enjoy, guilt-free.

I initially got this recipe from my mother-in-law, who is one of the best bakers I know. However, I wanted to make it a better fit for my “mostly” healthy lifestyle. So I tweaked some ingredients here and there, and with a few tries, I can safely say this is the cake of your dreams!

I know, I know, you want the recipe already!! Here it is:

Dry ingredients:

First, let’s grab our ingredients – and make sure they are all at room temperature!

  • 1 3/4 cup of all purpose flour (you can substitute with any of these flours: oat flour, almond flour, or gluten free flour) – I usually use 1 cup of organic unbleached all purpose flour and 3/4 cup of oat flour
  • 1 1/4 cup of unrefined sugar (coconut sugar or date sugar, you can even use maple syrup) – you can go with 1 1/2 cup if you want it sweeter
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup of unsweetened cocoa powder

Wet ingredients:

  • 1 cup of any dairy or non-dairy milk (depending on your dietary preferences)
  • 1/2 cup of oil (you can use avocado oil, olive oil, or coconut oil – I personally love avocado oil in this recipe)
  • 2 large eggs (please refer to this blog post for egg substitutes)
  • 1 cup of boiling coffee (1/2 Tbsp of instant coffee powder dissolved in a cup of boiling water)
  • 1 tsp vanilla extract

Instructions:

Preheat your oven to 350 F 

Prepare a greased loaf pan (or you can just put parchment paper in your loaf pan instead of greasing it)

Whisk together the eggs and sugar

Add your vanilla extract, milk, and oil, and keep whisking just until all wet ingredients are incorporated 

Start sifting the flour, baking powder, baking soda, salt, and cocoa powder on top of the wet mix

Mix everything just until incorporated (do NOT overmix)

Once you have a homogeneous mixture, pour the boiling cup of coffee into your mixture and mix again just until it’s dissolved (the coffee will give so much richness to the cake and will bring out the chocolate flavor)

Note: the batter will be on the runny side after adding the coffee, this is the desired consistency

Pour the cake batter into your greased loaf pan

Finally, you can add chocolate chips on top for some extra sweetness (and some fun)

Bake on the middle rack of your oven for 45-50 minutes (or until a toothpick poked in the middle of the cake comes out clean) 

You can enjoy it as is, or you can top it with chocolate ganache to kick things up

I am a sucker for all things chocolate, and this cake hits all the right spots. It’s a staple in my household, and I tried to make it as healthy as possible to enjoy it while maintaining my healthy lifestyle.
